Do we know when the split between East and West occurred? It might not even have taken place until that war. But even in the West, the decision to use sorcery is very recent - actually, that might make sense: influenced by the same experience of the war, but with time and distance from that hot spot of wild fae, it's faded, and they overcame that trauma in a way the Church in the East hasn't yet managed.
